Today We’re doing a simple Roasted chicken in the oven. We’re gonna go with some rosemary,some garlic,some lemon’ Zest, some lemon juice, fresh ground black pepper It’s all kinda nice happening here in the kitchen So you will want to stay tuned and the best part, little prep work it goes into the oven and then you know what? once it’s done, relax sip some wine, do you think whatever it is! And the very first thing you got to make , it’s a sort of marinade for the chicken . And here I have some rosemary, I already have about a tablespoon of that chopped up finely. And I have here what we call a “pimento pepper” or “seasoning pepper” It’s very hard to source in North America… outside of The Caribbean especially the Southern Caribbean So if you cannot find it, don’t fret you can leave it out. I have it’s in the fridge there. Actually, it is not even mine. Someone left it to the fridge!HAhahaha! I’m just using it. I thought it will go great with this recipe So that’s what I have diced up here. I have about four cloves of garlic. The zest of one lemon that’s seen there. The garlic, the rosemary, the lemon, that pimento pepper We’re gonna go in with a good dose of salt. Fresh ground black pepper. And to bring it all together. Some olive oil. Just gonna in with about two tablespoon of that olive oil. And since we’ve got that lemon zest already in there Why not use some of the lemon juice? So I’m just going to go in with juice of half of a lemon. You notice I caught the seeds there And all you want to do at this point is 1 Preheat your oven to 400 degrees Fahrenheit Have the chicken up to room temperature and then just basically Give this a good mix. We want to incorporate all those lovely ingredients here. And that is it this is gonna be one of the simplest roast chicken you’ve ever done. I kid you not it is gonna be super! Juicy and tasty. So oven at 400 degrees Fahrenheit. Let’s dress up the bird now with the marinade all ready and our chicken all nice and clean and trim What I did was I trimmed off most of the fat from there I took the wing underneath it nice and clean and all I’m gonna do now is that same marinade? We’re just gonna just brush it on to the chicken And you want to make sure every crack and crevice is covered in this lovely garlic rosemary Seasoning that we got going on here And I’m using a cast iron pan, you can use whatever roasting pan. You want to use try and get all on the bottom of the chicken in there I Will do it off camera because if I go and I start playing with that chicken there, it means my My hands will be a bit too oily. To play with the camera. The other thing I would do since we already have a lemon the lemon juice in there It’s going to go into the cavity with that there. the pimento pepper That’s gonna slice it in half and that’s gonna perfume things from the inside as well And he sort of rosemary that I have left back. Yeah, you’re right. It’s going in there as well. The only other thing I’m gonna do here now is get some chickens some kitchen String and I’m gonna tie up the bird a little bit okay. So there we go all dressed up I tied with the kitchen string by the way guys if you’re not following me already You can follow me on instagram at caribbeanpot but that’s where I Show you guys the stuff that i’m making currently and I take requests there and stuff like that If you wanted, at this point, you can go in with some more salt here I am cutting back on the amount of salt that I use You can also salt the cavity as well if you wanted to any leftover marinade, you can go into the cavity as well middle rack 400 degrees fahrenheit oven And you know little thing. No, I am NOT tenting it I’m not covering it with wood foil or anything like that If you wanted to do that for the first half hour, you can certainly do that. In my case, I want even browning About 15 minutes in and all I’m doing is Sort of basting it with the oils that’s accumulating on the bottom here And that’s gonna keep the chicken nice and moist. It’s gonna help develop a lovely rounded golden color all the way through. And I’m not brushing it on because if I start brushing It’s gonna move all that nice garlic and rosemary and stuff like that off the chicken and I’d really don’t want that. So there you go friends! Under an hour, so it took about 55 minutes to 1 hour the bird was about Lighting doesn’t do it justice here I’ll be honest with you could have some bright light so you may see it looking a little bit pale in color But it’s a lovely golden color. I assure you of that Middle rack just under an hour. It was about a three and a half pound chicken. So if you’re doing something bigger, Please give it a bit more time to fully roast off. Looking a bit darker there. Why this thing’s so bright boy? Anyways thanks a lot for joining me in the kitchen here today. I have two other chicken recipes I want to share with you all. In the same fat that’s leftover from the sort of rendering off the chicken there. All those flavors are like going in with some power boil fingerling potatoes back in the oven so it’s been cooked for about 15-20 minutes in salted water and Then all I’ll give it a nice toss in there and that’s gonna go into the oven Yo, it’s a lot of flavorsthat potatoes gonna take on from all that niceness in the roasting pan there!
