Welcome to Panlasang Pinoy! I am Vanjo Merano. Today we will be cooking, rich and creamy chicken sopas. Here are the ingredients that we will be using for this dish. Chicken, I’m using is the rotisserie chicken We have removed it and seperated it from the bone then shredded it. We will also use “repolyo” or cabbage, sliced into small pieces. Elbow macaroni, then the bacon, we also sliced it. Carrot, celery, onion and butter. We will also use chicken stock, evaporated milk, salt and ground black pepper. here is the complete list of the ingredients, including the measurements Are you ready? Let’s go and cook! We will heat up a cooking pot, if it is hot enough, we can now put the bacon, the bacon we sliced into small pieces. We put the bacon first without oil, what we want to happen is to extract the bacon grease. That’s what we’re going to use as oil, At this point, we already have extracted the bacon grease, let’s put the butter continue cooking until the butter completely melts. After that, we will fry the other ingredients that gives flavor to our sopas Let’s start with the carrot, I just sliced the carrot into small cubes. Let’s just scrape it all and continue frying The second ingredient I’m pertaining to is the celery this is the celery stalk that I also sliced into small cubes. The third ingredient is the onion, this is a yellow onion. I only chopped this onion, we’ll continue frying the ingredients for about 2 to 3 minutes. you’ll start to notice that it starts to smell wonderful in your kitchen After we’re done cooking ths, we can now put the shredded chicken This chicken is called a rotisserie chicken, which means, is it already cooked. We kust prepared it, removed it form the bone. Since I mentioned the bone, we did not put that into waste. We boiled it, and put in a little chicken stock so we can use it a soup for our sopas. Continue stir frying the chicken for 2 more minutes. Let’s now pour the chicken stock, this the boiled chicken bones. Aside from the chicken stock, you can also use chicken broth. this is the broth you can buy in supermarket, or you can also use water and we’ll just use chicken cube. Let’s cover our cooking pot and let the soup boil. At this point, the soup is already boiling, let’s mix it. We”ll just cook it for 15 minutes in medium heat. Let’s cover our cooking pot while doing it. After 15 minutes, we will add the cabbage, the one we sliced into small pieces. The cabbage can be an optional ingredient if don’t want to use it in your chicken sopas Keep stirring and continue cooking for 5 minutes. While doing it, we’re going to cover our cooking pot. At this point, the cabbage is now cooked. Now let’s prepare the elbow macaroni, this is the next ingredient that we’ll use. The one I’m using is a small elbow macaroni If there’s no elbow macaroni, we have so many alternatives. For a change we can use bow tie pasta or shell pasta Let’s continue stirring then cover our cooking pot again. We’ll cook this until the macaroni becomes softer We’re just in medium heat again for 15 mins. At this point, our macaroni is now ready It is already soft and the soup is now ready but we still have to complete it. When it comes to Filipino chicken sopas, we won’t be forget milk. That’s why I’ll be getting “evaporada” milk or evaporated milk. This is in can, we’re going to pour everything, this is the 12 oz. can We’re just going to mix this, let the soup boil again but we’ll cook it in a shorter time When it start boiling, let’s just cook it for another 2 minutes. We are now ready at this point, we can now add seasoning. The one floating is the butter, it gives the sopas richness, but if you don’t like butter, it can be optional. We’re just going to put ground black pepper and mix the soup and add some salt This is the last ingredient that we’re going to put Make sure to taste it first before adding salt and ground black pepper. Now, let’s serve this This is our rich and creamy chicken sopas. Let’s go and taste this while it is still hot. Let’s start with the soup. It’s delicious, wow You know, this so rich and creamy, it is rich because of the butter that we used. Butter can really make a soup rich and delicious. It is so creamy becuase of the “evaporada” or evaporated milk that we used. Delicious, and the chicken was flavorful Right? We boiled slowly the rotisserie chicken earlier over a low flame, so it released the flavor.
