Chicken Rica-rica is an Indonesian dish originated from Manado, North Sulawesi. The word “rica” means spicy in Manadonese. And of course, this dish is daringly spicy & full of flavors! Most importantly, it’s very easy to make. You will need: 1 whole chicken 250 gr Red chili (100 gr if you’re a beginner in eating chili) 1 Tomato, diced (or more, if you don’t like spicy) 2 Chives, chopped 10 Shallots 3 Lemongrass, chopped 1 tbs Salt 1 tbs Chicken stock powder 1 tsp Sugar 5 tbs Canola oil 1/3 Turmeric leaf, finely chopped 5 Lime leaf, finely chopped 100 gr Basil leaf Mix shallots and chili in food processor/blender, not too fine Simmer chili in oil over medium heat until fragrant Mix chicken and cover with chili evenly Be sure to cook chicken longer to make sure it’s well cooked to perfection Mix diced tomato. If you’re not a big fan of chili, use more tomato to tame the spiciness Mix in lime leaf, turmeric leaf & lemongrass too add fragrance & texture Make sure to add some water for the seasoning seep into the chicken Add salt, sugar & chicken stock powder Add in chives & basil.
