Welcome to Panlasang Pinoy! It is now the month of March. Outing with family and friends or excursion is really in demand for the season. And for the season like this, there is dish that is my favorite to cooked and packed for this events. And that is Pork “Adobo”. I will now show you the version of pork “adobo” that I am always making when we have an outing. This is a version of “adobo” that might be similar to “humba” since we are also using pineapple juice in it and I will also add an egg in it as well. I am calling this dish as Pork “Adobo” in Pineapple Juice with Boiled Eggs. These are the ingredients that we will be using for this dish. “Liempo” or Pork Belly. Eggs. Pineapple Juice. This is the “toyo” or soy sauce. White Vinegar. We will also be using garlic. Dried Laurel Leaves. Whole Peppercorn. “Asukal na Pula” or Brown Sugar. And ofcourse, Knorr Pork Cube. Aside from these ingredients, we will also be needing water and cooking oil. Here is the complete list of the ingredients that I have shown you earlier together with their respective quantities. Are now ready? Great! Come and let us now start cooking. We will be mixing the “liempo” (pork belly), pineapple juice and the soy sauce. I am pouring in the pineapple juice into the bowl of pork belly. Then we will add the “toyo” or soy sauce. We will just mix it. I will just mix it and marinate it for about an hour. It is much better to marinate it for longer hours for the pork belly to absorb more the flavor of the pineapple and the soy sauce. Soaking the pork belly into the pineapple juice would also help to make it tender. We will just cover our bowl. Usually, what I am using to cover it is a cling wrap just like this. There you go. We need to cover it to avoid contamination then we will place it inside the refrigerator. While we are marinating the pork belly, we will now be boiling the eggs and I will show you how to make a perfectly boiled eggs. I have placed a water into a cooking pot while the heat is still off. I will place all the eggs into the cooking pot with water and then we could now turn on the heat and let the water completely boil. What we need here is a rapid boil where in the water really boils completely just like this. Once that happened, we can now turn off the heat and let the egg stays into the hot water for 10 minutes. After 10 minutes, we will now drain the water from the pot since we are trying to stop the cooking process. As you would know, even if we have drained the hot water already, the egg is still in the process of cooking since it still has heat inside it. That is why I am pouring a cold water in it. Water from the faucet is okay since it is cold. But since it is not sufficient, I will still add ice cubes in it for the cooking process to be completely stopped. Speaking of ice cubes, we will now put the ice. Then let it stay for about 10 minutes. After 10 minutes, the eggs are now ready. Now that the pork belly has been marinated, we will now cook it. We will just be heating a cooking pot and put a cooking oil in it. We will just let the cooking oil to heat up then we could now saute the garlic. I have just slightly crushed the garlic. What we will be doing is to let the garlic turn into light brown. I will not be using any onion in our “adobo” recipe for today. But if you prefer to use an onion, feel free to do so. Once the garlic had turned into brown, we can now place the marinated pork belly. What I did is that, I separate first the marinade. We will just cook it until the outer part of the pork turns into light brown. We will set the marinade aside first and do not discard it since we will be adding it here later on. We can now add the marinade. This is the mixture of pineapple juice together with soy sauce. I will also be adding small amount of water since we need to boil the pork until it completely tenderized. After that, we will just wait until the liquid completely boils. We just need to cover our cooking pot. Once the liquid had boiled up, we will now be adding the Knorr Pork Cube. I am using this in our “adobo” for it to have a richer taste of pork since it would be so delicious if our “adobo” would be flavorful. We will just mix it. Then, we will add the 2 ingredients that is being usually used when cooking “adobo”. What I am reffering to is the whole peppercorn or “buong paminta” and dried bay leaves or what we commonly known as “pinatuyong dahon ng laurel”. We will just mix it and make sure that the laurel leaves were submerged into the sauce so that its flavor and aroma would mixed into it. We just need to boil it for about an hour for the pork to be thoroughly tenderized. We just need to cover our pot. While we are boiling the pork, we will now be peeling the eggs since it has already been cooled down. What we usually do when peeling the egg is the common way of peeling it by cracking it first then peel it gradually until all of its shell was peeled off. That is what I will be doing first. This is the most common way of peeling an egg. But did you know that there is a faster way of doing it? We will just be peeling the shell part by part. If we got lucky, there would be a big portion of its shell that we can peel off, but if there is none, we need to be patient. Just slowly. But what’s important is that, we won’t peel a chunk of egg white from it and we need to keep its texture smooth. That is only an ideal way of peeling. But if you have got a portion of egg white when you’re peeling it, that would be okay. We would still be eating the egg. There you go. This is one of the ways of peeling an egg. It is now ready right? You can peel the shell from the egg with this method or with this one that I am going to show you. I will just set this aside and clean our station. This is the second egg. What I am doing here is that I crack the whole egg slowly. Don’t exert too much force in it so that it won’t damage the inside since we just need to take off its outer shell. What we are aiming to do in here is that, we just need to crack all of the shell of the egg. After that, we just need to roll the egg for us to peel it off easily. Then we will just do the same method we have just done earlier. The same as that. What’s the difference in here is that, since we have cracked the whole shell of the egg, it should not become a burden already to remove the shell from the egg. There you go. Our pacing is just of the same, but the process of removing the shell isn’t that already hard since the other portions of the shell is coming off together. Actually, this is what I usually do since when you peel it off with your fingers, the portions of the shell is also coming off easily. This process is much faster compared with the process we’ve done earlier. This new one is the method that I am using when I am in a hurry since it is much easier to do when peeling off an egg shell. But this process needs a props. I have here a glass or mug which has a water in it. We will get an egg and place it inside. This would also be a good exercise since we need to shake the egg. There. As easy as that. Okay. That would do it. We will just be draining the water. This is now the egg and then we will now peel it. As for me, this would be a quicker process compared to the 2 methods we’ve done earlier. There. Once we have removed the first portion of the shell, the other parts should have also come off as well. There you go. We have now peeled all of the egg shell. We will just need to wash the egg. There is a water in a bowl in front of me and I will just wash the egg here. There you go, our egg is now ready. This is the fastest method I know. If you know any method that is faster or easier than the one I’ve shown you, you can share it on the comment section. For the easiest way, you can just buy a boiled egg so that you won’t have to do it by yourself. But just in case you want yourself to learn how to cook a perfectly boiled egg just like this and if you want to know how to peel an egg easily, you can try the methods that I have shown you. While we are boiling the pork belly, you can add water in it in case its sauce had dried up already. At this point, this is now ready, the pork belly is now tender. We will just be adding the other ingredients in here. Just like the white vinegar. You can also use coconut vinegar or apple cider vinegar in here. We will just pour in the vinegar in here and then let the liquid boil. After that, we will just mix it. I will now be adding “asukal na pula” or brown sugar. I will just mix it and it would depend on you on how much sauce would you like to be in your “adobo”. If you want it to have more sauce, this would be enough. You can now transfer it into a serving bowl or container. If you want a dried “adobo”, you’ll just have to boil it until its sauce evaporates. For this “adobo”, what I want is to have only a small amount of sauce in it. That is why I will be boiling it for about 10 minutes more. There you go. The sauce is just of the right amount. We will now turn the heat off and then let the “adobo” cooled down before we place the eggs so that the eggs won’t be cooked by the heat again since we have stopped its cooking process earlier. If you want to eat the “adobo” immediately, we can now transfer it into a serving bowl so we can now serve it. If you are going to bring it on your outings or picknicks, it would be best if you would separate the eggs from the “adobo” and just combine it when you would eat the dish already. This is now our pork “adobo” in pineapple juice with boiled eggs. We will now taste our pork “adobo” which we have cooked similarly to “humba” since we have added pineapple juice in it and it also has boiled eggs. We will now taste it. The egg first. There you go. You would see that the egg, although has a sauce in it, does not have any rings in its side. That is what I am reffering to a perfectly boiled egg. Although it has a sauce in it, if I will place it closer to you, the sides of the egg yolk is completely yellow. You would know if the egg was overly cooked when the sides of the egg yolk had darkened. So in here, it is just cooked perfectly. We will now taste the pork first. I have just sliced the egg so that you can see what I am talking about. This is the pork. This dish would really be great to be a packed meal. As what I am saying earlier, it would be better if we would not mix the egg with the “adobo”when we pack it and just place it when we will now be eating the dish. It is because when we packed it together for our outing or excursion, the egg might get crushed and the preparation would just go to waste. Mmm~ This is the taste of a real “adobo”. It is so delicious and has a fresh taste in it because of the pineapple juice. And the pork was so tender and it would literally melt in your mouth. Mmm~ I know that the pork fat is bad for the health, but once I have placed it in my mouth, my tongue tasted its delicious flavor. And since it is really tender, just a slight chew of it, it had already melt quickly in my mouth. That is how it is tasty and tender. I will now taste the egg. I have just added a slight sauce in it, that is why it is not totally dry that makes it is really enticing to eat. One story about me in which I’ve taken liking of “adobo” is that, since when I was a kid, we were always in Pansol, we will be bringing “adobo”, something to grill and plenty of rice. Then after taking a swim, we will go straight into where the food is which is placed on top of a banana leaves then we will eat the” adobo” and rice then some grilled pork belly. The grilled pork belly would come one at a time depending on how many were cooked already. Most especially when you got tired, that is when it really feels good to eat. Mmm~ It is really awesome.
