Today we are going to cook Oyako-don! Good for 2-3 persons servings. Let’s start with an onion. Slice it up. Then some leek or spring onions for garnishing later. Crack 2-3 eggs, 1 for each person should be good. Mix it lightly, keep the yolks slightly separated. Some corn flour or frying flour to coat lightly onto the chicken bits. Forgot to mention, here we are using around 2-3 chicken thigh meat. Portion is alike to 1 per person. Wash the rice, 1 cup jasmine rice or Japanese rice, mixed with brown rice. 1:1 ratio. As you like. Into the rice cooker! Beep! Now add some oil, to pan fry the chicken. Skin down first. Skin down first, we want some crispy skin for texture. Add some light seasoning with salt and pepper. We marinated the chicken meat beforehand with some soy sauce and rice wine. Ok. Almost done, skins look crispy now. Yum! Now for the sauce. We start by adding Daikon stock. Add 2-3 tbsp of soy sauce. Adjust accordingly to taste. And also some Mirin, 2-3 tbsp as well, adjust to your taste. Add the onions we prepared earlier. Bring to boil, stir them well. Now, the main highlight. Add in the chicken meat we have fried earlier. Bring to boil to fully cook the chicken meat. Then now, add the eggs. Slowly adding in. You will want it to be a little runny. Off the fire and lid cover it. Let it simmer on its own. Let’s check our rice! Looking good! Now we can plate the Oyako dish onto our fluffy rice. Done! Almost. Add some garnishings like spring onions, coriander or chili powder. There we have it! It’s pretty simple, freestyle. Thanks for watching! Hit Like + Subscribe!
