We are in the City Makani kitchen and we have a young sous chef with us and his name is
Rahul. ZUBIN: How are you, Chef? CHEF: I am fine. ZUBIN: Great! How long have you been in this industry. CHEF: 7 years. ZUBIN: Oh my God! That’s a lot of experience.. What is the special dish you are going to
show us today? CHEF: Malabar chicken curry. ZUBIN: Malabar chicken curry! once again,
Malabar. From which part of Malabar? CHEF: Kozhikode
ZUBIN: Kozhikode a.k.a Calicut. So we have Mr. Rahul’s special dish, Malabar Chicken Currry and we can get on to the standard recipe. Come on guys ZUBIN: What do we begin with, Chef?! 2tbsp coconut oil, pinch of ginger, pinch
of garlic, curry leaves, 2 whole green chillies, 2 whole chopped onions, 1 whole tomato, 3-4
slices red chilli. 1 teaspoon garam masalapowder, 1 teaspoon black pepper powder, 2 teaspoon chicken masala, 2 teaspoon red chilli powder, 1/2 teaspoon turmeric, 1/2 teaspoon
coriander powder, salt to taste. Saute until the rawness is left by. Now add water. Oh! That’s a lot of smell coming in! I am also learning, by the way. 2 coconut whole-sliced and then the chicken. Now when it comes to chicken, this is fresh chicken that is being used here, in City Makani for all the chicken as well as non-veg ,whatever
it might be fish , meat,beef,mutton, everything used is fresh. No frozen is used. Now we have to add the chicken now and there you go! Oh my God! We are almost there. .Ahh ,the masala smells
good ,Chef! We have to leave it for 2 minutes. So we have to add coconut milk and boil it
for 10 minutes. 1/2 litre coconut milk. By the way, no artificial color, ingredients
added. We have done it right in front of you. That’s one of the best taglines again a restaurant
has put in front of us. No artificial flavors, colors, etc. So we have to leave it for 10 minutes. Oh man! This smells extremely wonderful! Beautiful,Chef! Beautiful recipe. Oh my God! Viewers, this is a great chance. I think the dish is done. So we can plate it. That was a wonderful experience out in a commercial
kitchen with a 7 year experienced chef, Mr. Rahul. Thoroughly enjoyed it.
