(rapid chopping) Hi everybody! Today’s recipe is Korean-styled chicken noodle soup It’s called, dak-kalguksu. “Dak” means chicken “kalguksu” is knife-cut noodles. Let’s make delicious dak-kalguksu. 16 cups water 4 quarts 1 pound chicken breast 16 cloves of garlic 1 medium onion and then, boil For one hour, over high heat. Let’s make noodles. Today, I’m going to make four servings. 1 cup… So three and half cups, all-purpose flour. And, half cup starch. Salt, 1 teaspoon. Cooking oil, 2 tablespoons. I’m using grape seed oil. Water, 1 cup. Plus, quarter cup. First, with a wooden spoon, just make this one big lump. And then, we need to knead. So use hands. Starch make them really chewy. While you are eating this, bowl of soup the noodles are going to stay really chewy, and firm. So, around one minute. I made this one lump. But not yet done. I will just let it sit here, inside. Next, I’m going to prepare this zucchini . Cut this into matchsticks. Like this. Around one and half cup. So here… Around quarter teaspoon salt. Mix this. Chop green onion. Nice. We just need to knead. When you press this, this part, a lot of power here. So, use this part. Okay. Around two minutes I did it. Already looks good, but not yet enough. So, I’m going to let sit again. Usually, I really love the non-spicy version. But, some people love spicy food. What are you going to do? You can make “yang-nyeom-jang” or, this method very easy way you can make it. Hot pepper flakes. 1 or 2 tablespoons. And sesame oil. 2 teaspoons. And mix. That’s it. So one hour we cooked this. That’s enough… (sigh) What it look like..? Ooh~ Wow, wow~ So now, chicken all take it out. So garlic, right? You can take out garlic. We are not going to eat onion. So we made really great chicken stock. Color is a little milky and clear, clear soup. That’s key point. 1 tablespoon, salt. And this is fish sauce. 2 teaspoons. Garlic. See how easily you can mash this. And, 1 teaspoon, salt. And 2 teaspoons, sesame oil. And ground black pepper. Quarter teaspoon. And mix. Seasoning base. For what? Chicken~ So our chicken is here all~ prepared. What we have to do is make noodles, cut noodles. Let’s do. I’m going to reheat the stock. Look at this really really soft. Oh my god, really pretty. I love that. Okay, so we are going to do one more time. The more you knead the more chewy. Until it has the texture of your earlobe. Hehe~ Earlobe, don’t knead your earlobe! Your life span, long life span. So I really whenever I make this for somebody, I try to make it really long, as long as I can. Okay.. So now, I’m going to do the other half of dough. Actually, not that hard. Easy. High heat we’ll just cook this. Let it cook. So around three or five minutes you cook and you will see bubbles are coming up, and the noodles are floating. Which means they’re cooked. And then, let’s see. Come on! All the noodles are floating. Look at these long noodles. One bowl is for spicy version. The other bowl is non-spicy version. Here… Chicken… Chopped green onion… That’s it. You can serve this way. Today, we made dak-kalguksu Korean-style chicken noodle soup. Noodles are made from scratch. It’s easy.
