Hello all friends. Welcome to my channel. Today I want to show you how I make Steam prohok with ground pork and duck eggs. Here’s ground pork that I got from the store. As for prohok, this is what I use. It’s labeled as prohok made from mud fish. Prohok comes in different types, variety and price range. Over here this one is the most expensive, almost $20 a jar. There’s no bones. So for me it’s easy to use. That is why I like to get it. But the choice is up to you your liking and your personal preference. One more thing, The saltiness level in each brand varies keep that in mind when cooking with your choice of prohok. I also have fish sauce chicken powder, sugar, and black pepper. A little bit of onion oh one more thing garlic. It’s pretty easy. Chop the prohok, ground pork, garlic and onion If you have shallots it’s better. I keep forgetting to buy it. Chop it up and mix all the seasoning together then add the duck eggs. I am use this bowl to put it in and I am going to use this Instant Pot to steam it. Let’s get started. If I pound it the camera shakes so I press it instead. As for all the ingredients, it’s up to you. For example, I like garlic so I put a lot of garlic for those who doesn’t like garlic as much you can use less. Same as the use of prohok. I am using the duck eggs that I got the other day It’s not as fresh anymore as it’s been a few weeks since I got them. I finished peeling the garlic now starting to chop them. I have to hold the camera because it will shake if I leave it on the same counter
as my chopping block. That’s enough and now I am going to add the prohok. More or less is up to you. Adjust according to the amount of the pork. Since this prohok is all meat I don’t have to chop it too long. Now I am going to add the pork. Oh I forgot one thing the onions. Chop until they are all mixed together then add the other seasoning. Let me finish chopping. I’ve chopped this much I think it’s good enough for me. I am going to transfer this to a bowl and season it Place the pork mixture inside the bowl and I will add some more seasoning but let me grab some gloves. The next ingredient I have sugar 1.5 tablespoon sugar chicken powder 2 teaspoons white/black pepper to taste then fish sauce 1 tablespoon Let me crack the duck eggs in. I have a total of 4 duck eggs. I will use all 4 egg whites but reserve 1 egg yolk. I will use to add to the top once the meatloaf is cook for a nice golden color just wait and see. Duck eggs has a big yolk. Here’s the white for the 4th egg. And here’s the yolk that I am reserving to top it off. I’m almost done mixing Press done to break the clump so that it’s well mixed with the eggs and the seasoning. Sometime I steam it in little bowls to make it easier to eat. When I want to eat it, I just take the bowl and reheat it in the microwave. This time I am using a big bowl so I just scoop it out to eat when I eat it. It’s now ready and I am going to transfer it to a bowl. All set. My vegetable selection to pair with my meatloaf (steamed pork and egg with prohok) I have cabbage which I will blanche and broccoli which I will blanche as well this is sawtooth herb and cucumbers and this which some Khmer calls “dirt gallbladder” some calls it “cheating husband herb” but in English, it’s called “watercress”. I am going to wash it and stir fry it just with the water residue so it wilts a bit. That’s it. Let me test it Use the tip of knife and poke it I see that it’s not cook yet the meat is still a bit pink I am going to set it again. I am going to start stir frying the watercress I am not going to add any oil. There’s some water left after washing the watercress It looks really good. This veggie reminds me of butter grill, hot pot and clay pot. I like it a lot. I cannot leave it out when I make these. See, there is no need to use oil it will wilt on it’s own. If you want it to wilt faster, close the lid. When the lid is closed the steam will remain in there and wilt the watercress. If the lid is off you have to fluff and turn it often so it wilt thoroughly. You can eat it raw without saute or stir frying like this. It’s up to your liking. A whole bunch and cook down to just a little bit. It’s done. Turn the heat off. Strain it to remove excess water. The timer is up again. I’ve already test a spot by tasting the pork and it’s cook. I am now going to take the egg yolk and top it off and cook it a little bit more. I’ll just pour it. My hand is tied, so it’s hard. You can skip this step but it does add a nice color and the egg yolk taste good too. OK, let me spread some chilies on top. A little heavy on the chilies because I love spicy. But you don’t just eat it all at once I just eat a few at a time. I’m done arranging the chilies and I am going to add a little more water as the level is low. I’m only steaming this briefly. Here’s my vegetable platter for pairing this evening. Already plated and ready to go. Like I mentioned, I have watercress, broccoli (American) crispy cucumbers cabbage that I blanche and sawtooth herb. The timer is up again I will release the pressure. My husband cut this tube for me I usually use the tube from paper roll This is more sturdy but a bit small at the opening. So he heated to make it flexible and now it fits. He also made it taller. OK, all done now. There’s a bit water, but the color is nice I am just going to use the ‘saute mode’ and leave the lid off and the top will dry up. I took it out from the top but will wait til it cool before removing from the rack. Mommy, I can’t go get the broccoli on my plate I can’t go get it myself, I can’t. I want my Dad to help me. Look!
