Hi folks it’s Mike with GetMyTips.com, with the tip for you on how to make super crispy fried chicken at home. And I’m specifically talking about Kentucky Fried Chicken. Now some folks like the original recipe, while others like the extra crispy. I myself, prefer the extra crispy. So we thought, why not combine the original 11 herbs and spices, and make it extra crispy. And what we wound up with was an absolutely delicious, extra crispy original recipe fried chicken. And we’re going to share that with you, right after this. Okay before we get started, let’s talk about a couple things. # 1 it is not possible to prepare fried chicken the same way they do a Kentucky Fried Chicken, in your home. And that’s because Kentucky Fried Chicken, uses a very expensive pressure fryer. And they broast the chicken in hot oil under pressure. However we have worked this recipe so many times, we have come up with a very good alternative. # 2, we use MSG, both in the brine, and in the breading of the chicken. We found that when we didn’t use it, the flavor just didn’t pop. Now before you get all excited about MSG, do your homework because MSG is found in tomatoes, Parmesan cheese, and in fact most big chain restaurants use some form of MSG, they just don’t tell you about it. Ah yes, this secret recipe the 11 herbs and spices. Well it’s no longer a secret, it’s all over the internet. We got this list from the Chicago Tribune. And will include a link to that article, but will also include this list in the video description so that you can copy it. Okay after you wash the chicken, you want to brine it. Notice that we’re using all drumsticks. That’s because we feel like that has the best flavor. You want to brine it in 6 cups of water, 1/4 cup of sea salt, and 1/2 tablespoon of MSG. We use the brand Accent. Now we also use this inexpensive injector to inject the brine solution into the chicken. What that does is dramatically enhance the flavor of the chicken and helps it stay moist and juicy. Now if you don’t have an injector, and you would like to purchase one, you can help support this channel by using the affiliate link in the video description. Now let the chicken rest in the warm brine in the kitchen sink for about one hour. When the time is up, take the chicken out of the brine and pat it dry. Do not rinse the chicken. Next you want to mix your 11 herbs and spices with 2 cups of flour. Now we also included one half tablespoon of MSG. Now it’s time to mix for eggs and 1/4 cup of half-and-half or milk into a bowl. We use 4 eggs because the eggs tend to act like glue, to make the chicken extra crispy by holding the spice mix on the chicken. If you prefer to make the original recipe chicken, you can use two eggs and one cup of milk or half and half. If you have not already done so, now you can fill the fryer with peanut oil. We use peanut oil because we believe that it has the best flavor when cooking the chicken. Now if you don’t have a fryer and you would like to purchase one, again you can use the affiliate link in the description to help support this channel. And by the way, this is the same fryer that we used to make those delicious McDonald’s french fries in another video. If you haven’t seen that video, we will include a link to that video at the end of this one. Now that the chicken is out of the brine and it’s nice and dry, we can coat it with the flour and spice mixture. Notice that we put the chicken on a wire rack when we take it out of the flour. Ok the next step is to take the chicken that’s now covered with flour and spice mix and put it in the egg wash. Then we can once again put it in the flour and spice mix and make sure it’s completely covered. Then we put it to rest on a wire rack. Now it’s time to take a couple pieces of chicken and put it into the fryer. Now it only stays in the fryer for 1 and 1/2 minutes. Doing it this way and then putting it into the oven, will guarantee success. You’re not going to have undercooked or overcooked chicken. Flash frying chicken like this is a huge advantage if you intend to prepare a lot of chicken. You can flash fry as much as you want, and then put it all in the oven at the same time guaranteeing consistency. This is a close-up of the chicken after it came out of the fryer, and before it goes into the oven. Make sure that you preheat the oven to 350 degrees Fahrenheit. And then put the chicken in for exactly one hour after one hour. Remove the chicken from the oven and verify the internal temperature is at least 165 degrees. Now you need to make a foil tent to put over the chicken for about 15 minutes. Ok it’s been 15 minutes, so let’s check the chicken to see how crispy it is on the outside and juicy on the inside.
