Welcome to Lucky Recipes! Have you ever had a home cooked curry at an indian house? If you haven’t yet. This video is just right for you! Because today we will make a basic chicken curry. 1 whole chicken, 4 potatoes, 400 grams tomatoes, 300 grams onions, 60 grams garlic, 60 grams Ginger, some green chilies, some yoghurt, 2 bay leafs, 4 cinnamon sticks, 8 cloves, 8 cardamon pods, 2 teaspoons of turmeric powder, 1 tablespoon of coriander powder, 1 teaspoon red chilli powder, salt. When we make a basic chicken curry at home we love to add potatoes. We cut the potato just into half and soak them in cold water for about a half and hour. After that I will shallow fry them. I don’t need to peel the potato, as this one is very young with a very thin skin. And we think that is even tastier. While the Potatos soak in the water, we can prepare the sauce base. Therefor I’m taking my fresh ingredients, tomatoes, garlic, onions, ginger and the green chillies… and mix them into a puree. Our three best friends… ginger, garlic and onion are already inside the mixer… They will give the curry a hearty case and powerful aroma.. They belong to almost every meat dish. Next I’ll add the roughly chopped tomatoes. They will give the curry a very slight sweet sour taste. And now we need something hot… these flavorful green chilies. This is totally up to you how much you want to put in. Ooooh this smells so good…. that it immediately makes my mouth watery. You may think… my goodness what is she doing? How much chillies is she putting in?? But we thought it’s time that we cook a hot dish like we eat it in our home. Just add a little bit of water to make it easier to blend. Now as I am using fresh tomatoes here, we try to use fresh ingredients when possible… I’m adding some concentrated tomato paste to enhance the flavor the tomatoes. Mmmh very good. Ohhh you can smell the onions I need to be careful or I will start crying. Before frying the potatoes I pat them dry and dust over some turmeric powder and salt. This will make them even tastier while frying. Let me add a little bit of ghee that tastes even better. If you do not have ghee, then you can use an oil with neutral taste. Like sunflower oil or rap seed oil. Now I can add the first spices. These is a very basic Garam Masala blend. It contains cinnamon, green cardamon and cloves. And these three are also best buddies. And these two bay leafs will make the blend more aromatic. Fry the whole spices for a few seconds and then add a little bit of the puree. Just to make sure the spices don’t get burned. If you want to cook only with powdered masala blends… then put a little bit of the puree into the hot oil first. Let the excess water evaporate a little bit and then add your powdered spices. This way the spices are being fried in a gentle way and cannot get burned. This tastes much better as it will develop their aroma in the best possible way. Now the water from the puree has evaporated I can add my turmeric coriander and chili powder. And then add the whole puree…. and some salt. I suggest that you work with high temperature… because this will take a while. I’ll show you how the masala sauce should look like… so that you can add the chicken. Now 10 minutes have passed… and during this time I stirred again and again with my wooden spoon. Just like I said I’m using very high temperature here. Now you can see how thick and shiny the masala sauce has become. And this sizzling sound is just about right! Now I can add the chicken We bought a whole chicken here and divided it into pieces. We find the curry much more tastier rather than just to use boneless chicken. It’s so much better because you get a rich flavor! In restaurants, you know, they do not have so much time. Chicken breast is faster to cook… but believe me you will miss so much flavor! And it’s really worth it to cook a whole chicken when you make your curry at home. Now I can reduce the heat to medium. You have seen it yourself the preparation is so simple… We only had to use the blender to create our sauce base…. The secret of this curry is the time you’re investing for sautéing the spices with the puree. Only then you will create this original authentic taste. Ok now I can add some yoghurt… I bought a creamy Yoghurt which is not too sour. Because the tomatoes add a little bit of sourness already. If you don’t want to use yoghurt you could also use coconut milk. This will be also very very tasty. I’m not using all of it just a bit that will cook with the sauce. It’s totally up to you how much you want to add. Only give the chicken a gentle stir once in a while. I’m adding some water just about so much. It always depends how much water the chicken itself is losing. And how thick you want the sauce to be. That also totally up to you. Now close the lid, leave it on low medium flame and let it cook for about 30-40 minutes. Only stir gently once in a while. Our chicken curry has cooked for 40 minutes and then I’ve switched off the stove. After that I left the curry about 10 more minutes with the lid still closed. Now let me check how it turned out. Ohhh perfect, that’s how it should be. An original home cooked chicken curry. Don’t be surprised that you can see so much oil on the surface. It’s supposed to be like that. The chicken has also given some of it’s oil into the sauce but the main thing is that the spices gave all their flavor to the dish. The aromas of the spices are oil soluble. If you don’t like it, you can now easily remove some of the oil with a bigger spoon. But to be honest we like it just the way it is now. Now let me taste it! A little bit from the sauce… mhhmmm And then of course let me taste the potato. Mhhmmm it melts in your mouth just like butter. I would not like to miss it in our home cooked chicken curry.
