Hello! I will be showing you how to make Chicken Farci. Let’s begin by removing the innards of this “free-range” chicken. Remove the skin like so. Then, stretch the skin off the chicken. Now carefully pull the skin off the meat. Now at the wing, And cut away this last part. Look a this, This is all skin now. Now we must debone the meat. This part is easy. Use a sharp knife and do like so. Now slide the knife along the bone to remove the meat. All that is left are the bones. Here is the meat. We do this until the chicken is fully deboned. There’s more meat here. Pull this out. There’s more meat here. Now mince all the meat. Chop some onions. We use 2 onions. Now we grind the meat. Now gradually add the chopped onions. Now place it in a bowl. And do the same for the rest. We have 2 King Mushrooms. 1 teaspoon of salt. 1 teaspoon of sugar. Half teaspoon of chili powder. And half teaspoon of black pepper. Now we mix. We add Half a cup of cream. This one is 10% fat. Now mix together. We add green onions. Now leave it to rest. Place the skin down, Have a needle and some thread, And stitch the top part of the chicken. We stop when we reach the center. We stop halfway like so. Now we mix the stuffing. Now we stuff. Remove this piece of fat. And stitch it close. Cut the thread, and we are done. I use a baking tray and a two sheets of aluminium foil. Make sure to fold the sides of to prevent leaking of the juices. Spread cooking oil on the sheet to prevent sticking. And now we stage the chicken. Spread the stuffing within the chicken skin. And place it on the tray. We’ve already removed the head. Now spread Black Soy Sauce on the skin to give it color. And we put it in the oven for 1 hour. Bake for 1 hour at 350 F. Bake for 60 minutes at 350 F. It’ll be ready in an hour. 1 cup of chicken broth and a little ginger for the gravy. A little bit of black pepper. And a table spoon of Hoisin Sauce. Mix until a boil, and add a bit of flour to give it a starchy consistency. After 1 hour, we take out the chicken. We use the leftover juices for our gravy. Okay, it is ready.
