today I’m going to give you tips on smoking a beef brisket. Okay there is a lot of different
woods that you can use to smoke. There is oak, hickory, mesquite. I use the mesquite;
it is the most available pecan is really good, apple is really good this is what we use for
pork. Pecan is my favorite the reason I like pecan is because it has taste of mesquite
but it does not have the quiet zingy really smoky flavor, it is more of a sweet flavor.
If you use apple you use less barbecue sauce or less apple cider vinegar. You get a really
good smoking flavor out of pecan wood. If that is not available and you can get mesquite
you can’t pick up pecan at any grocery store but it usually, you can find a bag of mesquite
just about anywhere. Hickory is okay if you like Kansas style, it will give you that hickory
flavor. All woods are good to smoke with most fruit trees are good to cook with I have even
tried pear wood. But it is so small and limited that it is hard to get a hold of. Also not
many people want to volunteer to chop down their pear trees, there is not that many around.
So anyway by preferred is pecan wood, try that and I think that most of you would agree.
