Today I will be sharing, hot and spicy Country Chicken Curry(Gavran Chicken Curry) For this Curry we will be preparing all the Spices/ Masala freshly. So we do not require any special homemade masala for this Recipe. Everybody can prepare this Chicken Curry. Here I have taken 1 Country/Gavthi/Gavran Chicken. Chicken is washed properly. Its almost 750gm to 1 kg. For tempering, 1 Medium sized Onion is chopped finely. , grated 2 Tomatoes. 1 Bay leaf, 1 piece of Cinnamon, 2 Black peppers, 2 Cloves, To make Ginger-Garlic -Coriander paste, peel off 15-20 Garlic pieces, also almost equal quantity of Ginger is taken. 1 bowl of Chopped Coriander. Since Chicken is almost 1 kg we need more Spice paste. Add some Salt into Ginger-Garlic and Coriander. Shake well. Grind into fine paste. You can add some water if required. Now will cook Chicken. Heat 2 tbs Oil. Add whole spices for tempering. Saute it. Add finely chopped Onion. Fry the Onion till it becomes slightly brown. Onion has started becoming brown. Add 1 big spoon(1 tbs) of Ginger-Garlic-Coriander paste, which we have made. Saute well. When Garlic is cooked, add grated Tomatoes. Saute Tomatoes, till masala starts loosing Oil. After 5-6 minutes when Tomatoes started loosing Oil, add 1 small spoon(1/2 tsp) Of Turmeric. Saute well Add washed Gavran/Country Chicken into this. Add good 1 spoon of salt into this. Mix well so that all ingredients will properly coat the Chicken. Keep lid on top. Add 1 glass of water into lid. Like this, let the chicken cook on steam for 10 minutes. Do not add water immediately after adding Chicken into Oil. This will change its taste. So initially, for 10 minutes, let it cook on steam. Keep flame on medium to low. After 5 minutes, open the lid and stir the pieces from bottom. Because of salt Chicken starts loosing water. Into that water Chicken gets steamed. Because of water kept into lid, Chicken will not burn at bottom. Now Its almost 10 minutes, Stir well. Now water in the lid has become hot.Add water which we have kept in lid. Again keep 1 glass of water into the lid. This time, keep some space to let the steam escape. Like this after every 15 minutes, add the hot water from lid and cook the chicken Do not add cold water while cooking Chicken. To cook Gavran/country chicken in pot, it takes almost 1 hour. Same way you can prepare Broiler Chicken also. To cook Broiler Chicken 1/2 hr is enough. If you want to cook Gavran/Country chicken into Cooker, by above method, first cook on steam for 10-15 minutes, then add 1 glass hot water. Cook till 5-7 whistles on medium flame. Broiler chicken requires 2-3 whistles. While Chicken gets cooked, lets prepare homemade Chicken masala, For this I have 1 sliced Onion. 1 bowl of grated Coconut 2 tbs Coriander Seeds, 1 tbs Cumin Seeds, 4-5 dried Red Chilies, 1 bay leaf, 1 cardamom, 3-4 cloves 2 pieces Cinnamon, 4-5 black peppers. First dry roast grated Coconut, till it becomes brown. Continuously stir the coconut to avoid burning. heat 1 tsp Oil Fry Onion till it becomes brown. Keep flame on Medium while frying Coconut and Onion. Roast the Coriander seeds till it becomes brown. Keep flame low while frying spices. Roast Cumin Seeds. Nicely roast black Peppers, Cloves, Bay leaf till they becomes brownish. Add some Oil into dry Chilies, roast till they become blackish brown. Roasting all the spices brownish, gives nice color to Curry. Let all the spices cool down. Used mixer pot is washed and dried. Make fine powder of roasted Spices first. Now add roasted Coconut. At last add fried Onions and grind finely. Do not use water while grinding. Grinding spices by above sequence, helps to make fine powder. You can keep extra powder in Refrigerator and use it later. Now Chicken is about to cook. You can serve the chicken stock as a Soup. This healthy soup is very tasty. Now enough water is bowling to make Curry. Chicken is cooked nicely. Heat 3-4 spoons of Oil. Add remaining Ginger-Garlic-Coriander past and saute well. Now mixture has changed its color. Mixture is cooked nicely. Add homemade spice powder into this. If you already have stored homemade mix masala powder then only grind fried Onion and Coconut. Add 2-3 tsp of Homemade mix masala. Add 2 tsp of Bedgi Chili powder or Kashmiri Red Chili Powder to get nice color. Saute on low flame. Add this into cooked Chicken. Let it boil on low flame for 5 Minutes. WE have added salt while cooking Chicken and in Ginger garlic paste. Also you can add more Red Chili powder if required. You can boil water and add it into Curry if required Freshly ground spices gives nice flavor and color to curry. Spicy Gavran Chicken Curry is ready Serve with Bhakri, Onion and lemon.
