Hi YouTube, let’s get into my kitchen and make some yummy Korean fried chicken wings today! Let’s go through all the ingredients needed for this recipe First, cut the chicken wings in 3 pieces Tip: Gently slice your knife through the joints of the wing and twist it backward to pop out the bone; then you just have to cut through the meat to separate the wing into pieces Season the chicken wings with salt and pepper; set it aside for 2-3 hours Be careful not to brine the chicken for more than 3 hours or the meat will turn salty Next gently fry the sesame seeds over low heat for 15 minutes until they turn golden brown Now let’s make the spicy sauce for the fried chicken wings (Please find full measurements in the description bar below.) Heat a teaspoon of olive oil over medium high heat and stir fry minced shallot, garlic, and ginger When the minced shallot, garlic, and ginger turn golden brown, lower the heat and pour in the sauce and stir for 10 seconds (Here I added some water to thin out the sauce since I forgot to do that in the previous step) Beat up an egg and mix into the chicken wings; please note you might not use up the whole egg Add corn starch to the chicken wings and mix them all up until you no longer see the runny egg liquid Heat up a generous amount of vegetable oil in a saucepan Start frying the chicken wings and remember to turn them frequently to evenly brown the wings The secret to crunchy fried chicken wings is double-fry; I will fry the wings over med-high heat for 10 minutes and remove from hot oil and let them rest for 15 minutes For the second time, fry the chicken wings for another 18-20 minutes; Use a thermometer to track the temperature of the meat: it should read 165ºF (=75ºC) Add the spicy sauce and sesame seeds then mix them all up And we are finished!
