I will soak some black fungus and mini dried mushrooms for a day You can omit the black fungus or use large dried mushrooms as well Pour enough water to cover all the items and soak for at least 4 hours Mix everything together and marinate! Please store in the chiller if you are marinating for the whole day! I starting soaking them this morning and now it is 5pm I like to layer the black fungus on the bottom as they are quite bland on their own Add in the cornstarch just before cooking! If you are using chicken thigh, you can consider omitting cornstarch since the thighs are more succulent Unlike most recipes, we will not be using the water used for soaking the dried mushrooms I will attempt cooking the chicken on the top tier and rice on the lower tier I have not attempted cooking raw meat on the top tier on the electric lunch box The vents for steam to escape into the top tier is actually very small so I am not very confident Placing some goji berries (optional) as garnish We can see that the chicken is clearly not yet done But the rice will be ready Let’s continue cooking the chicken on the lowest tier, for 15 minutes Let’s check out the rice Warm and fluffy!
