You should try toasted sesame oil to fry instead of vegetable oil it makes a huge different, it's delicious….

Barry, cook your rice the way you want mate. I've dabbled with different methods over the years and whilst I have tried the absorption method as favoured by many here, it does not suit my pans as they have spouts. Interestingly one ingests more arsenic if you use the absorption method compared to way you do it.

I was going to comment on the rice cooking, but I see it’s been done.
It might be an Aussie thing, but fried rice is great with bacon through it. It adds the saltiness without overwhelming it. Plus another one to four meats too lol.

This turned out great! I will say I've never seen anyone cook rice like that, but I guess it's similar to the method if you were using "boil-in-bag" rice… (I'm sure you must have Boil-in-bag in the UK as well as we have here in the US, right?) It looks like it tastes great though, so it must work! Gave me a bit of a laugh as always.
Well that, and now I just really want fried rice…

chuckles 🙂 My parents have always instructed me to ignore the instructions on the box of rice and cook my rice 1 part rice 2 parts water, bring to a boil, remove from heat, cover and let sit for 20 mins or until all the water has been absorbed. ^_^ Result has always been a nice fluffy rice with a good chew and flavor w/out any crunchy/undercooked rice nor overcooked/mushy rice.
Hot/Freshly cooked rice = steamy rice = wet fried rice = asian flavored risotto (ew). That is why cold rice is used and we usually use last night's leftover rice.
You should do Egg Drop Soup, it's an easy one.
Yummy pineapple and cashews and raisins=Thai pineapple rice, or… Ham…. Finely chopped carrots and celery…. The possibilities are endless

You probly use cooled rice so that when you cook the rice and heat it again you dont overcook it and end up with soggy egg rice.

add the egg after everything is done cooking. let it cook with residual heat. if you do it any other way you're wrong

My family loves fried rice. I make chicken and egg fried rice all the time.. I actually use sesame oil to fry the rice. It adds a lot more flavor.

U could try Pineapple Fried Rice. My favourite.
Rinse the rice with water a few times before cooking and you'd never have to worry about overly starchy rice.

I have that same strainer! I have it because of the little gap between the mesh and the room around it. Stuff always gets stuck in there, and strainers are already a bit of a pain to clean, lol.
Also, knowing how my boss makes it, I'd recommend putting the rice in first, letting it get slightly brown and warmed through, then cracking the eggs in and stirring it well. Either way, I can't deny that yours still looks stellar!
Here is a handy little tip, in case no one else has mentioned it. As a general rule for rice, use a 2:1 ratio of water to rice, then simmer. You may think "why does it matter" but trust me it works. By the time the rice is cooked, there should be no water left to drain AND It will be the perfect texture. So if you want 250g rice, then use 500ml of water. Or if you measure by volume, 1 cup of dry rice, 2 cups of water. Brilliant recipe though barry 🙂

Hi BarryI allways rense rice in clean cold water before the boil. I dont think that they clean out of the packet just like salats And when boiled put the rice in the net basket and put it over the still hot put with no hot water in then the rice wont stick together 😊Other then that thinks for the video i will try that 😊

Thank you Barry, for the comment about pineapple on pizza. One of my biggest pet peeves is when people make up food rules based on their own likes and dislikes or by simply following the way it’s always it’s always been done. It’s your food, cook it and eat it any way you want! It’s like saying, “Don’t ever watch this movie, play this song or read this book because I don’t like it.”

So many crazy comments here! In the UK that cooking method is normal but really if you do it another way or prefer another way that’s okay but don’t bash the video. The whole idea is your given a recipe to cook and change for yourself. If you don’t like the method change it, if you don’t like bean sprouts, change it. It’s really not hard. All the comments of people feeling offended, get over it there are so many ways to cook! Enjoy learning new ways or just watching new ways from around the world!

Omg didn't think so many people would cry over some rice
When I make egg fried rice I cook the meat and/or veggies first. Then I mix the raw eggs into the cold cooked rice to coat it (which I think is the Japanese way of doing egg fried rice). I add the egg coated rice to the cooked meat and/or veg. Once cooked through I then add 2tbsp soy sauce, 2 tbsp sesame oil and 1 tbsp oyster sauce, cracked black pepper and mix it all well. Proper tasty!
Plus I never have any leftover rice as I only cook what I need. So I cook the rice then soak it in cold water to stop it cooking and chill it quickly, then let it drain while I’m cooking the meat/veg. Or just use a microwave rice packet, they work well too.
It’s interesting to see how others cook dishes differently. I usually like to put soy sauce on both on just the rice, and after i put the egg in. And the veggies I usually use (onions, carrots) go in even before the rice. But that’s the fun in recipes that are versatile like this.

Authentic, never colour rice. And use overnight leftover rice. Use jasmine rice is so much better.

If you really enjoy your soy sauce use reduced sodium in this recipe. Otherwise it's really easy to turn your fried rice into a salt lick.

I love love love homemade fried rice. Its so fun to make and nice to eat all cozied up at home.
The only thing I'm disappointed with is the fact you beat the egg with a WOODEN SPOON and not a fork or whisk. Yes I know it seemed to work fine; however, this goes against everything I know and understand as a serial egg beater *cri*
Top tips for people.
1. Use rice from yesterday as it stops it from sticking.2. 2 cups water to 1 cup water. Boil then simmer with a lid on until the water goes away.

This is a fool-proof method which makes perfect "eggy fried-rice base" resulting in golden-yellow egg coated grains of rice, with no shreds of omelette visible.1. Keep cooked rice in the fridge overnight. 2. Heat the wok with a spoonful of cooking oil until very hot. Continuing to heat the wok, break up chunks of cold rice in the hot oily wok with the flat of a spatula until all the rice is hot and the rice grains are well-separated.3. Remove from heat.4. Gradually add beaten egg into the hot rice (approx. 1 egg for 250 g/1 cup of cooked rice, but adjust according to preference) and mix well with spatula until the rice grains are finely coated by a film of eggy liquid. The eggy coating will be cooked by the rice's residual heat.5. Return to heat; combine "eggy fried-rice base" with condiments and pre-cooked ingredients; stir fry until warmed through; serve.
This is the method recommended over 30 years ago by Lisa Yam (aka Mrs Fong), Hong Kong's doyenne of TV cookery shows and author of innumerable Chinese cookbooks for family meals.

I will have a go at this tonight, but was somewhat bemused by how much rice I got from cooking 250g in prep, which was more than all of what I'd normally cook in one go. Do other cooks typically have this amount left over after a meal?

By the way, in my place, we cook our rice differently. We usually boil the rice in water. And there has to be enough water for the rice to absorb.
Try doing this with the rice instead:Put some rice in the pot, about as high up as your finger is thick (or two fingers if you're cooking for the whole family). Put double the amount of water and some salt.Get it on the stove at high heat till it boils, then bring it down to medium-low and cover it for 15-20 minutes. Don't lift the lid till then.Ideally, you should get it all cooked without having any excess water to strain out.

Shouldn't use freshly cooked rice. Refrigerate overnight. Too much moisture, its a little mushier if you dont. better to use "day old" rice.
