I, Ravi Sisodiya welcome you all to my cooking channel Today I will be making Dhaba Chicken Very famous recipe of India made almost everywhere But I have done some innovation and making it in my way the ingredients that I have taken I have changed Mathania Red Chilli from Jodhpur. Very Tasty also we are using butter – 50 gm these two are special ingredients also to tell you there is no puree used in this dish we have Oil – 150 gm Onions – 6 that are chopped Chopped Tomatoes – 4 Big Cardamom – 1 Bay Leaf – 1, Star Anise – 1 and you can see we have a small piece of Chabeela Cloves – 2 and Green Cardamom – 2 Green Chillis – 10 cut in small pieces Chopped Coriander – 25 gm Dried Fenugreek – 20 gm to give taste Curd – 50 gm Salt – 2 tbsp Mathania Red Chilli Powder – 2.5 tbsp Coriander Powder – 2 tbsp Ginger Garlic Paste – 2.5 tbsp Turmeric – 1/2 tbsp Lime Juice – 2 tbsp with 1.5 tbsp Sugar Butter – 3 tbsp and Chicken – 1.5 Kgs I have cleaned it and washed the chicken Lets now cook Dhaba Chicken We are cooking Dhaba Style Chicken First of all add Oil – 150 gm The pan is well heated now Let me check the oil it will take 2-3 minutes more Oil has been put and now I am adding Hot Spices Oil is well heated now I am using Green Chillis half of them Salt – 1 tbsp Ginger Garlic Paste – 1 tbsp and add Turmeric Now in this we fry the chicken so that it binds well Chicken is loose. When we fry it binds and develops taste Now lets fry for some time for approx 5-7 mins for chicken to become brown as you can see the chicken has been kept for 7-8 mins and it is now light brown and the smell of the chicken is also removed now and it has become tight now now let’s reduce the gas and let’s remove it We have used a sieve stick so that oil and water gets filtered with oil chicken has left water as you can see it is brown now chicken is now fried and taken out Now in the left over oil we will add onions and fry for 7-8 mins As you can see the onions are now golden brown and tender well as 10-12 mins have elapsed now I am increasing the flame and now put all the spices in it now we are preparing the gravy chicken is already half cooked next is lime and sugar next is coriander powder next is tomatoes chopped we will prepare the gravy using it red chilli powder and adding the half ginger garlic paste now we will add water and cook for 8-10 mins Now we adding water to cook the gravy approx for 8-10 mins now we cover the lid for 10-15 mins and stir in between so that spices doesn’t stick to the bottom approx 7 mins have elapsed I have stirred in between see the beautiful color here Mathania Red Chilli is an amazing chilli see the color and taste is just amazing I have cooked it once we will cook it once more 2-3 times cooking is essential for cooking the gravy well and taste also enhances I have added curd also add a bit of water for cooking we will not use much water Cover the lid once more for 4-5 mins 5 mins have elapsed The Gravy is well cooked now see the thickness oil is also being released color is very deep Gravy is well cooked now basic magic to make good chicken and mutton is that gravy cooks well now in this we add chicken to the gravy now we will mix the chicken in the gravy properly You can see the chicken is fried it is also cooked 60% now we will cook chicken with this gravy and hence a little bit of water using a little bit of water now open the the lid and cook for 4-5 mins As you can see the chicken and gravy is cooked and the oil has been released this means the chicken is ready. Let’s add a little water before adding water I will add butter coriander and dried fenugreek for giving flavor adding a little water too get more liquid in gravy You have seen I have added Curd, Fenugreek and Coriander and water also added according to need Now I will cover the lid for 15 mins and lower the flame and the chicken will be ready 15 mins have elapsed after adding water switch off the gas you can see Dhaba chicken is ready see the gravy how colorful it is I will tell you see the gravy of dhaba chicken looks very nice since we fried the chicken before only now it has tender well and the gravy too is amazing In this way dhaba chicken is ready I request you to have patience when making non veg and make it from the heart and the taste will double this special dhaba chicken is especially for you I have used butter in it used fenugreek and in this way cook and if you like, please share and subscribe.
