say “oh, it’s meatloaf night?” or …“OH, IT’S MEATLOAF NIGHT?!” depends on the meatloaf
that’s being served to you. Here in the Test Kitchen, we’ve tried lots of different meatloaf
recipes over the years to see how we could make them more exciting. And I know you’re
gonna love what we came up with. We start by making a classic meatloaf with
ground beef, bread crumbs, eggs, some water, ketchup and seasonings. We put that on a cookie
sheet and we finish it off with some ketchup before baking it.
And that’s where the similarities to classic meatloaf end ’cause once it’s done, we cool
it in the fridge for a couple of hours or even overnight so it can firm up.
Once it cools, we cut it into thick slices and bread each piece in some flour, then into
beaten eggs and last (but not least) into seasoned panko breadcrumbs.
Unlike traditional meatloaf, we pan fry each piece for a couple of minutes on both sides
until they’re crispy. The result is a total transformation that
will get everybody excited about meatloaf night. It’s crunchy on the outside, juicy
