with a blue cheese sauce. Shorter? Chicken in the basket. Even shorter? Basket. I’m Ralph de Kok, professional barbecuer and every week
I make a fantastic dish, going from very easy to extremely culinary! Look at what the mailman delivered. This is a great “Kamado Joe rotisserie spit”. I have some nice ideas to use it for . I already lit up the “Kamado Joe”,
and it’s already glowing. Nice and calm, btw. It’s filled with big block charcoals which means they’re
less hot than small coals. Hele grote kolen… 😉 It’s now 200 degrees Celsius but I think it will lower a bit.
200 degrees is fine for now. The guys over at “meat fish.nl” delivered me
my chicken. Chicken wings. Let’s make some chicken wings on the barbecue. The grill I’ll be using is a “Kamado”, the “Kamado Joe”. The classic 3. I’ve been using it for a couple of weeks. So far I’m really, really happy with it. Great unit!.
I got a spit, the so called: “Joetisserie”. You can use it to roast a lot of things on a spit.

you can really make some cool stuff using a spit. So today we’re making chicken wings. Great appetizers. With blue cheese, also very popular in America.
I’m doing a it a little bit different. we’re putting the chicken into a grill basket Hence “chicken in the basket”. Hens.
Stay witty guys. Dab it dry. I’ll be making a delicious rub. An all purpose rub. I’ve come up with it but you can always change some things. When you have a base rub,
If you want it sweeter you just add some sugar. If you want it more spicy just add some extra cayenne
or some chili flakes… or even tabasco to pep it up. It’s great if you can do that starting from a base rub. Definitely amazing on chicken. A little less great on beef,
but I’ve got a different mix for that. We’re starting with some cumin seeds. You could also use cumin powder. I’ll just use a mortar to crush them.
‘Cause if you don’t crush the seeds they might get stuck between your teeth. Paprika powder, 1,5 tablespoon. Next we add salt. 1,5 tablespoon. Garlic powder. 1,5 tablespoon. Then we add brown sugar. I’m blind, guys!! “Guys”, can you hear that?
Why do I specifically say “guys”? Apparently only 0,3 procent of my viewers are female…! So… …This one is for you, guys! I also didn’t take a shower this morning, just for you guys… 2 Tablespoons brown sugar. 1 Tablespoon of onion powder. Thyme, I’ve got some fresh thyme but you can also use
dried thyme if that’s all that you have. About 1 tablespoon. I’l first fritter the thyme. Talking about viewers. Those who are not yet subscribed, and those who like these video’s, subscribe! Because every week I make a really great

lime zest. That’s the peel of a fresh lime.
I use biological limes If you don’t use those you have to
make sure they’re clean before using. Wash them in hot water because they can
have a wax layer on top to preserve them longer. Damn, only 0,3% female viewers. If by now

They love that, they think it’s great! The rub is done. We’ll add a drop of olive oil to make sure the rub sticks to the chicken wings . Bare hands guys! The rub’s been added, evenly spread out. Deliciously disgusting hands. Hoppa! I’ll show you the basket. This is half of a grill basket We’ll add this to the spit. It works amazing! The great thing about a spit is that the wings can dance around and get an equal cooking process. They keep moving around the heat source. It’s a ceramic grill so it radiates a lot of heat. This gives it a continuous oven kind of effect. Like this. I might need to move them a little bit because
the other side of the basket has 2 of these little shelves
in between. Then it’s just a matter of clicking it together. The spit rod. I put it in there like this. I’ll hang it in there, like this, there he goes. You go in here… Great! How great is this!? You can go and watch soccer
and within the hour we’ll have chicken wings. I also want to add some smoke wood. I have a wood chip soaker. You can soak them before hand and let them drain like this. You can take the chips out of the basket and put them in the coals or you can just add the whole basket. When you feel like you’ve had enough smoke
you just take your tongs and remove the basket. Gone smoke. Ideal!

150 grams of mayonnaise. I like using “Zaanse” mayonnaise.
It’s typical Dutch, its a sweet mayo. 150 milliliter “creme fraiche”. A good gulp, let’s do about 1,5 tablespoons of red wine vinegar. Worcestershiresauce! About a tablespoon. Next is the blue cheese.
Today I’m using “Stilton”, old Stilton cheese, Which is less soft and thicker. You could also use “gorgonzola”,
with is really soft. It’s all allowed. How much do we need, Ralph? 150 grams. That’s a lot. Yes, but that’s why it’s called a ‘blue cheese sauce’. And don’t forget to add some pepper and salt. Last night this thing was used in the bedroom… 🙂 This thing. There he goes. Let’s check. A spoon? [Funny Swedish sounds] [sorry…probably racist, nowadays…] Swedish chef! [email protected]! Delicious but I want to add a little twist to it. Some “Shiracha” (chili) sauce. You can recognize it by its bottle. If you don’t like spicy you can skip this part. But I love it. With chicken wings in general,
definitely in America with their buffalo wings, they should be a bit spicy. Look! Now that’s a blue cheese sauce for grown ups! So great! Not even that spicy, just a bit of… I wonder how our chicken wings are doing. It’s 160 degrees. The smoke is subtle. great! Our wings have spun around about 185 times.
about 40 to 45 minutes on 170 degrees. They’re almost done, I’m letting them cook a few more minutes. The loyal viewer knows that, from now on, we serve a

I can really advise wine lovers to try these wines. Strawberry, cherry, it has a sweet flavor. It’s sweet but still a dry wine. It’s really good! Oh Jezus, those flavors! Amazing! We’re carefully removing it. Oh, you should see how great this looks! Golden brown. This is the definition of golden brown. Look at that!
Amazing! About halfway through I took out the basket with smoke wood.
I didn’t want too much smoke in my chicken. Wow, guys, this is incredible! The Blue Cheese Sauce…! Here they are, my chicken wings
