Meatloaf is a dish that can be enjoyed hot, warm or cold. It is usually made with beef, veal or pork. I chose to prepare it with chicken meat I soak the wood ear mushrooms for 1 hour I finely cut the onions I crush the garlic cloves I peel them, I chop them I put 3 tablespoons of olive oil in a pan over medium heat I put the onions I stir from time to time for 5 minutes Then I add the chopped garlic I stir from time to time for 1 minute Then I cut off the fire and I let it cool I cut the bread into chunks I put them in a bowl I pour in the milk and let them soak I remove the foot of the mushrooms I mince them I cut the chicken into chunks To get a little firm texture, I use chicken thighs and breast I chop them in a blender I put them in a mixing bowl I add: the mushrooms The salt 1 egg Some ground pepper 1 tbsp of light soy sauce 1 tbsp of Brandy which will give a very good taste The onion and the garlic I knead the bread beforehand I mix all together to allow the ingredients to adhere to each other I put the mixture in a terrine I press it to remove the air to avoid holes in the meatloaf I put 2 bay leaves to perfume during cooking I put the lid and I cook it in the oven for
