Chicken has a reputation for being bland but
it is actually quite a versatile ingredient in that you can dress it up any way you want.
One of my favorite weeknight chicken recipes is this Lemon Garlic Rosemary Grilled Chicken
that with a little bit of planning ahead takes only minutes to make!
I also have this really special technique that will really lock in the flavor and make
it so juicy too. Today i’m using a mix of chicken breast
and chicken thigh for variety. But if you prefer all-white meat, you can totally do
that too. I’ll season the chicken with some kosher
salt and black pepper then set aside. In another bowl, i’ll add 3 minced garlic cloves, 1
tbsp of freshly chopped rosemary, zest of a whole lemon, so about 1 tbsp, 1/4 cup of
lemon juice, and ⅓ cup of really good olive oil. I’ll mix this all together and pour it over
my chicken. I’m going to let this marinate overnight for maximum flavor, but you can
start grilling after 2 hours too. I’ll turn my grill on medium high, let it
get hot, then add my chicken. Now for my surprise cooking method. I’m
going to take a piece of foil, put it over the chicken and then take 2 bricks and lay
it on top. This is a traditional Tuscan cooking method that they use to cook a whole chicken.
This helps crisp up the skin and cooks it evenly when it’s laid flat. The brick forces
the meat to be cooked more evenly and quickly and gives it a crispy skin. But since we don’t
have skin today, it’ll just cook it evenly. I also find that this cooking method really
locks in the flavor and makes it really juicy. If you don’t have two bricks laying around,
you can use any heavy bottomed pan like a cast-iron pan. I’ll let each side cook for 6-7 minutes
until it becomes golden brown, and cooked through. Grilled chicken goes with almost everything.
I love adding it to my one pot pasta pomodoro, or my kale salad that I’ve dressed with
orange, avocados, cranberries, and almonds. Try this simple chicken recipe and let me
