Hallow, I am Mrinal. We are in Andhra today. Andhra has a special record. It has the most non vegetarians in India. The state’s 98% population is non vegetarians. This is one among the most famous non vegetarian places in the state. The kitchen churns out pots filled with Biriyani every other moment it seems. It operates like a factory. This is the side gravy they serve with mutton Biriyani. Have a look at the spices and oil mix on the top. This is another area of the “factory”. Meanwhile, my companion Unni, asked for the restaurant’s permission to shoot. They couldn’t care less!. They are pretty cool. This is more like a self service supermarket for some. They collect their Biriyani and the accompaniments by walking to each station. A normal person cannot comprehend this chaos. —— The are out of Mutton Biriyani. I am trying to get at least one —— The table is not clean yet. It is crowded as always. The plates have a special leaf made thing on top. That is one mutton Biriyani split in to two. The rice in the Biriyani is fluffy and light. Tastes of Ghee. May not be ghee. Could be mutton fat. Plenty of Curd based salad are ready for service. The literally serve it on plenty. And it is not a name sake side either. Properly made with curd, onion and colander leaves. The portion of the Biriyani is huge. More than double that of a usual place in Kerala. Where did they get these spices from! The star is not Mutton Biriyani. But Chicken Fry. It has something special in it. Mutton Kebab looks and feels like Mutton fry. Melt in the mouth. How did the manage to get that texture! Mutton Kheema. It is a bit salty. But goes well with the rice. The absolute star is the chicken fry. The spice mix in it seems complex. But I have a feel that it could be really simple. They regretted that they are almost out of Chicken leg pieces in the fry. I usually do not prefer chicken leg pieces. But today, I can do this with it! These are the last bits and pieces from the chicken fry plate. They are full of flavour. Everything is fried in it. Right from the curry leaves to the garlic pods. —– I am trying to be friends with the cook who prepares chicken fry to get the secret spices mix combination —— —– He doesn’t want to be friendly at all —— This the best professionally run, disorganised restaurant I’ve even come across. The air conditioned hall we had food at is behind those curtains. They have a non AC dining area this side.] Many are having food here too. They sell sweets here. A tobacco stall is next to the sweet stall. It is chaos. But enjoyable. Really enjoyable. This man is handing over coupons for Kebabs. But we didn’t take any coupons. How do they manage this place? But they run it smoothly! I bought a pan and started chewing it. This is my first time. I was almost in hell as it was too strong for me. It is best to keep away from tobacco products.
