Hello, I am Madhura and welcome to MadhurasRecipe Marathi We are making tawa chicken today. There were lot many requests for non veg recipes. Yes, we are making tawa chicken today. We will make garam masala using whole spices available at home. We will make chicken using that garam masala. So it gets really nice flavor, it gives awesome taste. What to do is in whole spices take about 2 tsp coriander seeds, 1 tsp cumin seeds, 1 small piece of cinnamon, 1 green cardamom, 1 star anise, 4-5 black pepper corns, 4-5 cloves, 3-4 dry red chilies. Roast whole spices a little. Do not burn them. Just heat them up. When they are hot, turm off the gas. If these burn then They release bitterness into the dish or spices. Another thing if the quantity of whole spices is changed Then also bitterness of spices is released. That’s why I mostly avoid using fresh spices while showing recipe. Mostly if so happen is 1-2 cloves or cinnamon are added more then whole taste of the spice is ruined. So do take lot of care while using these spices. Try to use masale as shown. Or the masala may turn bitter. Spices are hot now. Transfer them into a blender jar & blend them into powder. Heat up 3-4 tsp oil in same pan. Add finely chopped Onion, 1 finely chopped tomato & mix well. After mixing add chicken. Wash it well. I have taken 375 gm chicken. Really easy recipe. Not much blending is involved but it tastes just awesome. Specifically homemade masala taste nice. Fry everything well. Don’t cover & cook. Keep on frying in pan. Until chicken is cooked finely. It takes about 15-20 minutes for chicken to cook. We will cook until then. No need to fry onion & tomato. It gets fried along with the chicken in the pan. So no need to cook. Awesome. After cooking the chicken for about 10 minutes, it changes its color. It has got white color. It means chicken is getting cooked well. We will cook this for another 10 minutes in the same way, will fry. No need to cover. I have fried the chicken for about 20-25 minutes on the pan. Let’s check if it is cooked. Check the biggest piece. Yes, this is almost cooked. Another pieces too. It is almost cooked. When it is almost 80-90% cooked add 1 tsp ginger-garlic paste, freshly blended masala according to your taste. You can store the leftover masala in airtight container for later use. But it should give taste too. So we will cook for another 10 minutes. The masala should not stick to the pan. For that you can add about 1-2 tsp water at the base. So that masala won’t stick. Do not add much water or you will get gravy. Just a little. Perfect. No need to mix. Add water so that there will be moisture at the base. Let’s cook it. Awesome. What a fantastic color!!
