Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make chicken dum biryani today. Let’s make dum biryani masala first. For that I am using whole spices. Take 1/2″ piece of cinnamon, 5 peppercorns, 4 cloves, 1 black cardamom, 1 green cardamom, 1 star anise, 1 javitri/mace. Use small javitri and not a big one. As it has a very strong flavour. A few stone flower. Stone flower gives nice flavour. Transfer all spices into clender jar. Close the lid and blend it into powder. Biryani masala is blended well. Nice aroma!! I have blended it into powder. It has got a little coarse texture. We have to marinate chicken. Take 375 gm chicken. Try to use leg pieces and big chunks of chicken while making biryani. Like so. For marination, add 1 tbsp ginger garlic paste, 1/2 tsp turmeric powder, 1 tsp lemon juice, 1 tsp salt, biryani masala. I am keeping 1 tsp masala in blender pot only. 1/4 cup thick curd. Add 1 tsp red chili powder, 1 tbsp coriander powder and 1/2 tsp cumin powder. Add 1/4 cup finely chopped coriander and 2 tsp mint leaves. Mix everything well together. Chicken is mixed really well. It has got nice coating of spices. Cover and transfer into freeze for marinating overnight. I have marinated chicken overnight. Take chicken out of freeze 1 1/2-2 hours before making baryani. It should come to room temperature. We have to cook rice upto 50-60%. Heat up water for that. Take a pan. As we are making biryani, ghee is must. You also can use oil. I mostly use ghee. Add 2~3 tsp ghee at the base. Add marinated chicken on that. Place a nice layer of chicken. Add water released by chicken in the pan. Add 2 tsp more water at the base. Aroma is awesome. Add 2-3 tsp ghee on the chicken. Add fried onion on that. This is looking yummy. Let’s keep this pan aside. Take chapati dough and stretch it a little. Stick it to the lid that we will keep on pan. So that steam won’t escape from lid and biryani will be cooked on dum. Stick the dough to the lid so that when we cover pan with this lid, steam won’t escape form anywhere. And the biryani will be cooked nicely on dum. Boil 4 cups water for making rice. When water begins to boil, add whole spices in it. Add 1/2 tsp shahjeera, 4-5 peppercorns, 1 black cardamom, 1 cinnamon, 4-5 cloves, 2 bay leaves, 1 tsp ghee. Ghee gives nice flavour to ghee. Add 2 tsp salt. Wash 1 cup basamati rice and soak it in water for 30 minutes and drain excess water. Add soaked rice in water. Don’t cook the rice completely. We have to cook it only 50% for about 7-8 minutes. We have to add slit green chillies while marinating the chicken. I forgot to tell that yesterday. So I am adding green chili in marinated chicken now. But you can add chili while marinating. I have cooked rice just for 5 minutes. You can see. It is not completely cooked. Even it has not got complete shape. Turn off the gas. Let’s layer the biryani now. For layering the biryani, drain the excess water in rice. And layer it on this chicken. You can leave little water in rice. That water helps rice and chicken to cook. After adding rice, biryani is looking awesome. Add 2 tsp water in which we boiled rice on the biryani. So that the rice won’t be dry. It will be juicy. Add saffron. Take 10-12 saffron strands and soak them in 2-3 tsp water in microwave safe bowl. And microwave it for 30 seconds. So it gets nice colour of saffron. We had left some biryani masala while marinating chicken yesterday. Sprinkle that masala on rice. Rice gets nice taste of this masala. Add finely chopped coriander, mint, fried onion and 2-3 tsp ghee. I add a little more ghee. It gives nice taste. Now let’s close the lid. Cook biryani on medium heat for 10 minutes. After 10 minutes, cook biryani for 10 minutes on low to medium heat. Finally cook it for another 15 minutes on lowest possible heat. I have cooked biryani on medium heat for another 10 minutes. Cook on low heat for 15 minutes more. Cook on lowest possible setting of your gas. If you don’t have heavy bottom pan, put a flat skillet under pan. You can cook biryani like this. I have cooked biryani on low heat for another 15 minutes. Turn off the gas. We will wait for just 5 minutes to open the lid. Check after 5 minutes.Tempting aroma!! Let’s see now.. Wow.. You can see. Rice is nicely cooked. Chickan has become nice and soft. Wow.. This is really nice and juicy. Let’s take this out. Dum chicken biryani is already. I have made 2 dhulwad special recipes today. First chicken dum biryani and another kurkurit kolambi or shrimps.I don’t eat non veg. My hubby and kids are having holiday on account of dhulwad. Kolambi is already finished.
