Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make delicious anda birayni today. Ingredients are 1 cup long grain basamati rice. You can use surati kolam rice instead of this. Surati kolum also swells up good and is nicely separated. 1 cup finely chopped onion, 1 finely chopped tomato, 4 tsp curd. While boiling rice we will add javitri, 2-3 bay leaves, 2 cinnamon sticks, 4-5 black peppercorns, 1/4 tsp cumin seeds, 2 green cardamom, 4 cloves & 1 black cardamom in rice. We also will need finely chopped coriander leaves, mint leaves, fried onion. I dry and pack onion that is required for an year. Whenever I want to make biryani, I fry or roast this onion in very little oil. It becomes nice and crunchy. We get fresh onion. If you fry fresh onion then it is a very time consuming process. It takes a lot of time. To avoid that I store dried onion. Whenever I want it for biryani, I fry it in little oil. We will require 6 boiled eggs. These are not here. But we will require. We want to marinate eggs. For that 1 tsp corinader powder, 1/2 tsp garam masala, 1 tsp red chili powder, 1/4 tsp turmeric powder. While making biryani ingredients to be added in that masala are biryani masala, red chili powder, coriander powder. You can use any brand or home made garam masala instead of biryani masala. Salt to taste, 7-8 saffron strands Dissolved saffron in water. It gives nice flavor. 1 fresh green chili and 1 tsp ginger garlic paste. We will require little ghee & oil. To begin with take basamati rice into a bowl. Wash it really good with water for 3-4 times. I have washed & strained rice. Soak the rice in enough water for about 30 minutes. Till rice gets soaked, let’s begin next process. Take red chili powder in a bowl. Add garam masala, coriander powder, turmeric powder and salt. Mix all dry spices. After mixing spices well together take boiled egg and make slits on it with knife. So that masala will be marinated well. I have taken 6 boiled eggs. Roll eggs well in the spices. Every time the proportion that I tell is enough for about 3-4 people. Today’s biryani is enough for 2 people if you are having only biryani. Eggs have got nice coating of spices. Let’s shallow fry these. If eggs turn a little dry after boiling then wet them with a little water. If eggs are a little wet these get nice coating of spices. Egg is well coated with spices from all sides. For shallow frying eggs heat up 1 tbsp oil in a pan. The oil should be really hot. So that coating of eggs doesn’t drop in oil. If you are making fish fry or shallow frying any thing oil should be enough hot. So that any thing ratians its coating. Let’s fry eggs nicely from all sides. Fry for about 2-3 minutes from each side. And flip eggs like this. So that eggs will be fried from all sides. Eggs have been fried well. Turn off the gas. Boiled eggs have been fried. Masala eggs are ready. Let’s begin to make biryani masala. I have taken 1 tbsp oil in a pan. Add 1 tsp ghee. Ghee gives nice flavor, taste to biryani. Heat up ghee a little. Oil is enough hot. Add finely chopped onion. You also can add sliced onion. Fry onion until it gets nice golden color. Until biryani masala or base is getting ready, I have kept some water for boiling for cooking rice. Onion is well fried. Onion has bedun to turn little golden. Add tomato, ginger-garlic paste, Red chili powder, coriander powder, turmeric powder, green chili and fry for about 3-4 minutes Tomato should cooked soft with onion. While cooking tomato if you feel that this masala is getting dry Or it is sticking to the pan then add a little water about 1-2 tsp and fry well. Fantastic flavor.Tomato is well mashed with onion. Add curd. Mix well and cook for about 2 minutes. I have fried this masala well for 2 minutes after adding curd. Masala has begun to release oil. Oil is getting separated from these spices. Add biryani masala. As I already told you can use garma masala instead of biryani masala. Add mint leaves. Mint leaves give nice flavor to biryani. So it is must. Add coriander leaves. Mix well and base for making biryani is ready. Let’s boil rice. I have boiled water to make rice. We want about 4-5 cups water for 1 cup rice. Add all whole spices in boiling water. Add 1 tsp ghee. Ghee gives fantastic flavor to rice. So do add ghee while boiling rice. Also rice doesn’t stick to one other. Add washed and soaked rice in boiling water. Boil well for about 7-8 minutes. Cook the rice about 80-90%. I have boiled this rice on high heat for about 7-8 minutes. Rice is almost cooked. Nice grains!! It feels soft on pressing. This means rice is done. Let’s assemble now. Heat up masala once more while making biryani. If it is a little dry then add water. We want to make juicy biryani and not a dry one. When masala begins to boil add fried eggs. Mix eggs well with masala. You can decide the quantity of water depending juiciness of biryani you want. If you are making biryani in large quantity, I am making for just 2 people. Take half masala and eggs out. Add a layer of rice, again add eggs’ layer on rice and again a layer of rice. You can do it like this. But I am making biryani in much less quantity. So I am not following that. Add a layer of rice on masala. Drain all the water from rice and add a layer on it. After adding good layer of rice, crush fried onion and add. Add mint leaves. Crush with hand and add so that these release nice flavor. Do not cut mint leaves before hand. Add finely chopped coriander leaves, lot of ghee. More the ghee testier is the biryani. Add saffron water in rice. Saffron gives nice flavor to biryani. Here is some water in which rice was boiled. I had kept it. Add a little water for that rice so that it will help in cooking. The rice doesn’t become too sepatared. Rice remians nice and juicy. Put a lid on the pan, keep the heat on medium. Accroding to induction 800 watts or 130 Deg C Cook for 5 minutes. I have cooked biryani on 800 watts or 130 Deg C for 5 minutes. Now reduce heat or temperature of induction. Cook on 400 watts for about 10 minutes more. I have cooked on 400 watts for 10 minutes. Reduce the temperature to lowest, 200 watts And cook for about 20-25 minutes. I have cooked biryani on lowest possible temperature for about 15-20 minutes more. Turn off the gas. How to do if you don’t have induction? If you don’t have inducation then put a skillet under the pan. Then transfer it on the gas so that biryani won’t stick to the bottom of the pan or won’t burn. Let’s check now. Nicely steamed!! Fantastic flavor!! Let’s serve now. Biryani is perfect. Rice is nice and juicy. Biryani must be nice and juicy always. Biyrani has not at all burned at the base. Biryani is juicy but rice is nice and separated. Rice is cooked well. Hot and nice biryani is served. It is equally important to garnish biryani. I am serving few onion slices. Awesome. Anda biryani is already. It is super delecious. You can have this biryani as it is. It goes well with raita too. It goes fantastic with any gravy, chicken rassa or anda rassa. This biryani gets nice texture, color. It becomes nice and juicy. The rice also gets well cooked. Do try this.
